If you are going to be making the clarified butter required for Ethiopian home-cooking you are going to need Koseret. This herb from Ethiopia reminds of Oregano but has a light grassy flavour as well as being more floral.
Making the clarified butter (Niter Kibbeh) is a breeze and requires only a few herbs (all available at Elliewan.com) and a little stove-top love & attention.
Be sure to make a big batch because you can freeze the butter and have it ready at hand for those days when you need an emergency feed of Kitfo!
